Pesto Baked Eggs

“I wish there was an option to patent recipes ” says my husband when he tasted this dish. He said, “why don’t they serve such dishes in restaurants, wow its soo good.” These were the comments from my egg lover husband.

I wasn’t originally a great fan of eggs but he loves and needs his eggs every day and thus I developed a habit into eating eggs for breakfast. Now eating something everyday warrants a variety of breakfasts as opposed to a single style omelet. Over Easy, avocado toast, poached, benedicts, tostada, sunny side up, Frittata, chipotle egg salad, boiled eggs, avocado egg salad, egg muffins etc are some of the ways we consume eggs for breakfast apart from omelets.

He was working from home today so I decided I make him something nice, he was also working long hours these days.So I came up with this baked eggs recipe and it turned out absolutely delicious plus they are low in calories yet very filling.

Serving Size 1 serving
Calories Per Serving Approximately 282 per serving
Difficulty Easy

Ingredients:

1/2 bell pepper diced

4 eggs

1/4 cup diced onion

2 medium tomatoes diced

1 tablespoon pesto

handful of spinach chopped

1 spring onion diced

1/4 cup of broccoli chopped same size as bell peppers

2 cloves garlic

salt and pepper to taste

parsley or cilatnro for garnish

2 teaspoons of olive oil

2 teaspoons parmesan cheese

Procedure:

1.Preheat oven to 425F. Grease 2 ramekins with olive oil. Heat the remaining oil in a saute pan and add the onions and garlic and saute for 1 minute on medium-high flame.

2.Add the bell pepper and broccoli and saute for 2 mins on a medium- high flame.Now add the spinach, tomatoes and spring onion and saute till tomato is slightly soft. Season with salt and pepper, add the pesto and turn off the stove and combine with the vegetables.

3.Add the veggies to the greased ramekins and crack 2 eggs into each ramekin and sprinkle salt and pepper and parmesan on top.Bake for 8-10 minutes until whites are set, or until your desired level of doneness. Garnish with parsley or cilantro and serve hot.

Tips:

There are many variations you can make in this, you can add chicken, mushrooms pasta sauce and make various combinations.
