Onion Red pepper Scrambled Eggs

A very simple Breakfast preparation with eggs served with avocado and toast.
Preparation time:10 minutes

1/4 cup onion,finely chopped
1/4 cup red pepper,finely chopped
2 eggs or 1/2 cup egg substitute or 1/2 cup egg white
1 tablespoon milk
1 pinch salt
1 pinch ground black pepper or your favorite seasoning
1 spray olive oil
1 tablespoon Cheese(optional)

1.On a medium flame,spray a pan with olive oil and saute the onions and peppers with salt and pepper.

2.Once the onions are soft, turn down the flame add the eggs and milk,let sit for 10 seconds and start stirring slowly.Continue stirring until all the egg is cooked.Top off with cheese if using it.

Serve with some avocado sprinkled with lemon juice,salt and pepper.
Do not overcook the eggs or cook them on high heat, they should not get hard or they will turn to a rougher protein for the stomach to digest.
You can use eggs or egg whites or egg substitute in this recipe.
