Broad beans are rich in fiber and are good way to get your daily fiber requirements in.

Ingredients:
Goru chikkudukaya(broad beans)- 4-5 cups chopped
Oil-2 teaspoon
Mustard seeds-1/2 teaspoon
Cumin seeds-1/2 teaspoon
Chana dal-1 tablespoon
Urad dal-1 tablespoons
Garlic-3 cloves finely chopped
Curry leaves-1 stem
Turmeric-pinch
Red chili powder-1-2 teaspoons depending on the spice level needed.
Salt to taste
Verusenagapappu podi(Peanut powder)-1 tablespoon(see recipe here)
Procedure:
1.Chop the beans and steam them with some salt.
2.In a pan heat some oil and on medium flame add Chana dal and Urad dal let them roast until slightly brown.
3.Add cumin seeds and mustard seeds. Let the mustard seeds splutter. Add the curry leaves, garlic and turmeric and sauté.
4.Add steamed beans, Salt and Saute for 2-3 minutes. Cover with lid and let the beans get cooked stirring in between.
5.Once the Beans are cooked, add Chili powder.Add peanut powder as per your taste and mix and let it cook for 1-2 minutes and serve.
Tips:
Adding the peanut powder will give you a nice texture in your vegetable. You can also add grated coconut in place of peanut powder.
This can be had with Roti or rice.
While chopping them its good to remove the fiber from the side or it can get incredibly chewy.
Do not over salt the beans because the peanut powder has added salt and after adding it it might end up being too salty.add very little salt to the beans and after adding the peanut powder if salt isn’t sufficient you can add more and stir for a minute before removing from stove.
