Bachali kura also called as Malabar Spinach is rich in iron and protein.This dish is a lentil preparation using Malabar spinach.

Ingredients:
Bachali kura(malabar spinach)-2 bunches(separate leaves and chop)
Onions -1/2 medium chopped
moong dal-1/2 cup
Oil-2 teaspoon
Green chilies 6-8 sliced in half
Mustard seeds-1/2 teaspoon
Cumin seeds-1/2 teaspoon
Garlic-3 cloves finely chopped
Curry leaves-1 stem
Asafoetida-pinch
Turmeric-pinch
Tamarind paste-1/2 teaspoon
Salt to taste
Procedure:
1.In a pressure cooker heat some oil and on medium flame add cumin seeds and mustard seeds. Let the mustard seeds splutter.
2.Add the curry leaves,garlic,onion,turmeric and green chilies and saute for a minute.
3.Add the moong dal and stir.
4.Add the Bachali(malabar spinach),salt and tamarind and mix.
5.Add 4 cups of water, asafetida and close the lid allowing 3 whistles(depends on how soon you pressure cooker cooks dal) and switch off the stove.After the steam is gone open the cooker and serve.
Tips:
This goes well with rice or roti.
You can add a squirt of lemon juice for a little tangy flavor.
