Breakfast crepes are perfect quick meal with a balance of carbohydrates,protein and fat.Crepes can be either savory or sweet based on the fillings.It is analogous to our Dosa with the exception of the flour used for it.

Ingredients:
Filling:
1/4 cup spinach, chopped
2 eggs(or 1/2 cup egg whites or egg substitute)
1/4 Red pepper, chopped
1/4 cup onions, chopped
Cheese(optional)
Procedure:
1.On a pan spray some oil and saute onions,spinach,red pepper with some salt and pepper for 2-3 minutes.
2.Pour Egg into the pan and slowly scramble the eggs until cooked and keep aside.Drizzle with some cheese if you like.
Crepes:
1/2 cup all purpose flour/pancake/waffle flour
1/2 cup milk
1 egg
1 teaspoon olive oil
pinch of salt
Procedure:
1.Take a bowl and add flour, milk, oil, salt and egg.
2.Whisk them until mixed, do not overmix.
3.Heat a skillet on to medium-high.Pour 1/4 cup of batter and roll it into a crepe(if you have a crepe roller that will make it flatter and even).
4.Let it cook on medium to low flame and flip and cook for a minute.
5.Place crepes on plate.Add some cheese or butter if you like(optional).Place the egg prepared above and some avocado(optional) and drizzle with some hot sauce.

Yes,you can use all purpose flour,pancake/waffle flour works fine too.
