Corn and Cheese Balls

We had guests coming over this past weekend and I did not have a lot of vegetables at home.I came up with this dish as a quick appetizer using frozen organic corn I had in my freezer.This is absolutely delicious, slightly sweet from the corn, spice from the green chili and crispy

Preparation time 20 minutes 
Serves 30 balls
Serving Size 1 ball
Calories Per Serving Approximately 55 per serving
Difficulty Easy

Ingredients:
3 cups frozen corn(thawed , try to use organic)
1 cup grated parmesan cheese
1/2 cup bread crumbs
2 tablespoons all purpose flour
2 tablespoons rice flour
salt to taste
3-4 green chillies finely minced
oil to fry

Procedure:
1.Pulse all the ingredients except cheese,oil and flours in a food processor to a coarse texture.

2.Mix in cheese and flours.

3.Make round balls out of the batter and deep fry at 350F until golden brown and drain onto paper towels.

Tips:
Serve with tomato ketchup or green chutney
You can use any other cheese, pepper jack cheese, cheddar cheese work the best.
