Madeleine is a typical french Petite Four(small desserts).Its a simple small sponge cake shaped like a shell,often served dusted with powdered sugar.In this recipe I have used orange zest to flavor it but you can use any other flavorings like vanilla,lemon,almond etc.For their petite size and taste they are a perfect accompaniment for your evening tea or a party when you have friends over.

Preparation time 60 minutes 
Serves 18 large madeleines
Serving Size 1 madeleine
Calories Per Serving Approximately 52 per serving
Difficulty Medium

3/4 cup granulated sugar
1/2 cup all purpose flour
1/2 cup butter melted
1/2 teaspoon baking powder
zest of 1 orange
pinch of salt
2 eggs lightly beaten

1.Mix all the dry ingredients together

2.Mix to incorporate eggs

3.Stir in melted butter,do not over whisk and chill the batter for at least 30 mins to 1 hour

4. Before you are ready to bake preheat the oven to 400F. After the batter has been well chilled pipe to greased molds

5.Bake at 400F for 5-7 minutes until the edges start to turn light golden brown.Flip onto a sheet tray and let cool.

If you know you are going to have a party, make the batter ahead of time and refrigerate, you can bake it an hour or two ahead to keep them fresh.
If dusting powdered sugar on top, reduce the amount of sugar you add to your recipe.
