Quick Romaine Salad

 I love fresh salads,I usually eat salads in the night instead of a heavy meal,it helps me go to bed feeling lighter and waking up lighter.This can be paired with a fresh baked chicken or fish fillet.

Preparation time: 5 minutes
Serving: 2-3 cups

Ingredients
2 cups finely chopped romaine lettuce
1-2 teaspoons balsamic vinaigrette(see recipe below,also available in trader joes)
1 tablespoon grated Carrots
1 tablespoon grated beetroot
1 tablespoon mixed nuts( I like the omega trial mix snack size packs in trader joes)
Procedure
1.Take the chopped romaine lettuce in a bowl.

2.Add the grated carrots to it.

3.Add the grated beetroot to it.

4.Add the nuts.

5.Add the balsamic vinaigrette and toss.

Balsamic vinaigrette
Ingredients:

1 Tablespoon dark Balsamic vinegar
1 1/2 tablespoon warm water
pinch salt
pinch black pepper
1 tablespoon of extra-virgin olive oil

Procedure:
1.Whisk all ingredients together until emulsified.

Tips:
Salads taste best when the vegetables are fresh and have the crunch in them.To test if romaine is fresh or not,look at the bottom of the leaf(root)-it should not be pink in color.If it is pink it has already started getting bad and will not taste good.
