Ivy Gourd-Dondakaya Fry

There is a funny story behind this.Growing up I always used to compete with my brother and always speak opposite of what he says.If he wants egg yolk,I will ask for egg white,likewise he said his favorite curry was Bendakaya(Okra) and then I say mine is Dondakaya(Ivy gourd), Thus my favorite curry all through my childhood happened to be Dondakaya.

Preparation time: 50 minutes
Serving: 6


Ingredients:
Ivy Gourd-1 pound,finely cut lengthwise
Oil-2 teaspoon
Mustard seeds-1/2 teaspoon
Cumin seeds-1/2 teaspoon
Chana dal-2 table spoons
Urad dal-2 table spoons
Garlic-3 cloves finely chopped
Curry leaves-1 stem
Turmeric-pinch
Red chili powder-1-2 teaspoons depending on the spice level needed.

sugar-2-3 pinches
Salt to taste

Procedure:
1.In a pan heat some oil and on medium flame add Chana dal and Urad dal let them roast until slightly brown.

 2.Add cumin seeds and mustard seeds. Let the mustard seeds splutter.

3. Add the curry leaves and garlic and sauté.

4.Add sliced Ivy gourd pieces, Salt and turmeric,Saute for 1 minute.Cover with lid and let it get cooked stirring in between every 2-3 minutes.

 

5.Once the pieces are cooked add Chili powder and 2 pinches of sugar, mix and let it cook for 2-3 minutes.

Tips:
You can omit the sugar if you like.Sugar just gives a nice caramelization that enhances the taste of ivy gourd.
