Sheer Khorma

Sheer Khurma(pronounced Sur-ma) is a Muslim dish made right after the season of fasting for Ramadan.Sheer means sweet and Surma means Dates. It is said the real taste of this dish can be only relished after the fast.Growing up I used to look forward to my Muslim friends to invite me over for the feast to taste their Biryani,Sheer Khurma and Double-ka-meeta.

Preparation time: 30 minutes
Serving: 10 people
Ingredients
2 tablespoon Ghee
3/4-1 cup Sugar(depending on sweetness desired)
1/2 teaspoon Cardamom powder
1/2 gallon Milk
1 tablespoon Sweetened condensed milk
1 pack fine roasted vermicelli

To be roasted:
15 Dates (deseeded and diced)
2 tablespoons Cashew pieces
2 tablespoons slivered Almonds 
2 tablespoons Pista slivered
2 tablespoons Raisins
2 tablespoons Chironji nuts(charoli)(optional)
Procedure:
1.Roast each of the dry ingredients in ghee separately and keep aside.

2.In a pan boil milk, once it comes to a boil add sugar,condensed milk and cardamom powder.Add the vermicelli and the roasted nuts.Boil just to a point when vermicelli is soft(less than 5 minutes),do not overcook.

Tips
You can also use heavy cream instead of milk to prepare this for added richness.
Do not burn your ingredients while roasting or the milk while boiling it spoils the taste of the entire dish.
