Squashes are the ultimate comfort foods for the winters.Acorn Squash is mildly sweet like butternut but warmer in taste and it tastes amazing with warming spices like nutmeg, chili powder, cajun etc.In this recipe I combine Roasted acorn squash with the saltiness of the feta and spice from cajun for a yummy winter soup.

Ingredients:
1 Acorn Squash
1 tablespoon oilve oil
2 tablespoon feta cheese
salt to taste
fresh ground black pepper to taste
1 shallot diced
3 cloves garlic diced
1/4 teaspoon cajun spice powder
2 teaspoons ghee
1 teaspoon vegetable bouillon base
Procedure:
1.Preheat oven to 350F. Slice the Acorn in half, drizzle olive oil, sprinkle salt and pepper and bake skin side up for 50 minutes- 1 hour till soft.
2.In a saucepan add ghee and shallots, turmeric and garlic and saute till soft.
3.Transfer the ingredients into a blender along with the peeled acorn squash,bouillon base and add half the feta and a couple dashes of cajun spice powder, sufficient water and blend.
4.Place it back in pan and warm it up adjusting salt and cajun spice and serve with few crumbles of feta on top.
Tips:
You can use chicken bouillon base instead of vegetable or replace it with stock
