Strawberries and Cream Cake aka Strawberry Cake

Strawberries and Cream is an american favorite flavor.This cake combines the super spongy Chiffon cake with whipped cream and strawberries to create a light and delicious dessert. I’m baking this for my husbands birthday this year.

Preparation time: 1 1/2 hour
Serves:1 9 inch iced Cake

Ingredients:
1 Pint fresh strawberries(slice half of them and keep the other half)
1 recipe chiffon cake
1 recipe whipped cream

Procedure:
1.If you are making a  layer cake cut the 2 cakes in 2 layers,else place the first layer on a cake board.

2.Place 2 dollops of whipped cream on top and spread around in an even layer.

3.Place the sliced strawberries and place the second layer of cake.

4.Place 3-4 dollops of whipped cream and start spreading to the edges and ice them on the sides,make sure the spatula doesn’t touch the cake and you have enough cream in between so you don’t disturb the cake crumbs.

5.Take the rest of the whipped cream in a piping bag and pipe your favorite design and decorate with strawberries.

Tips:
You can also use strawberry pie filling  in the center of the cake,make sure it is not runny though.
I made a glaze with strawberries to decorate the top,for the glaze, grind 4 strawberries into a fine puree and transfer to a pan,add 1/4 cup sugar and juice of 1 lemon and 1 teaspoon tapioca starch, 1/2 teaspoon strawberry essence and mix well and bring to a boil,strain the mixture an drizzle over the whole strawberries cut into half.Let cool before decorating on cake.
