We were having an Onam celebration and I went over to my friends place to get the recipe for Ada Pradhaman which I think was very delicious.This is keralas variety of payasam.
Preparation :30 minutes
2 cups Ada
4 cups jaggery finely grated(or powdered)
8 cups coconut milk
2 teaspoons Cardamom powder
1-2 tablespoons ghee
1.Boil 1 litre of water in a large vessel and add ada. Cover the vessel and let cook for about 15 minutes until the ada is soft.
The dry ada looks like this.
2.Add the jaggery and stir until completely combined.
3.Add coconut milk and reduce the flame and keep stirring until the mixture thickens slightly.
4.In a separate pan heat the ghee,roast the cashews and raisins and add them to the ada along with the cardamom powder and stir.Let cool and serve.
Do not add the jaggery until the ada is completely cooked.
