Aloo Curry-Potato Curry

This is a quick recipe when you have guests coming over for lunch, tastes great with rotis or rice or in a bread sandwich.
Preparation time: 30 minutes
Serves: 4.


Ingredients:
2 large potatoes
2 teaspoons oil
1/2 teaspoon cumin seeds
Pinch of asafetida (hing)
1 teaspoon ginger garlic paste
2 onions pureed in a grinder
2 tomatoes pureed in a grinder
6 green chilies minced
1 teaspoon coriander powder
1/2 teaspoon garam masala powder
1/2 teaspoon turmeric powder
1/4 cup chopped cilantro 
1 teaspoon red chili powder

Procedure:
1.Boil the potatoes for 3 whistles in a pressure cooker with salt.Peel and cut them to pieces.

2.Heat the oil in a pan.Add the onion paste and the minced green chilies and saute on high flame for 3-4 minutes and on medium flame until the onions paste turns golden brown.

3.Add ginger garlic paste and saute for 1 minute.

4.Add tomato puree and saute until water is evaporated and the mixture comes together.

5.Add water,salt,red chili powder,coriander powder and garam masala, check the taste and add the cut potato pieces to it.
6.Cover with lid and let cook for 5 minutes on medium flame stirring in between.

Tips:

You can also add green peas after adding tomato puree.
