Sorakaya a.k.a Aanapakaya(lauki/bottle gourd) Bajji is a regional taste of coastal Andhra served with Rice or Roti.
Ingredients:
2 cups of bottle gourd(sorakaya) chopped into small pieces.
4 green chilies minced
3/4 cup onions finely chopped
1/4 teaspoon turmeric
salt to taste
1/2 teaspoon garam masala powder
2 teaspoon oil
1/2 teaspoon mustard,
1/2 teaspoon cumin seeds
1 spring curry leaves
1/2 teaspoon ginger garlic paste

Ingredients:
2 cups of bottle gourd(sorakaya) chopped into small pieces.

2 teaspoon oil
1/2 teaspoon mustard,
1/2 teaspoon cumin seeds

Preparation
1.Pressure cook bottle gourd pieces/sorakaya mukkalu in 2 cups of water and salt for 3 whistles and let cool.
2.In a pan heat some oil and on a medium flame add cumin and mustard seeds and curry leaves and let splutter.
3.Add the chopped onion and green chilies, turmeric and saute for 4 minutes and add ginger garlic paste and stir for a minute.
4.Now add the steamed bottle gourd pieces and gently mash them into the onions such that a part of the pieces are mashed and part of them hold shape. Stir until all water has evaporated. Add garam masala powder and stir for a minute and turn off the stove.
Tips:
Do not completely mash the vegetable as the texture may not be appealing.It works best when the half the vegetable is mashed and half of it holds shape.
