These are an egg white based cookies made without any flour.These are perfect to make cookie sandwiches like Oreos or other cream biscuits.
Preparation time:20 minutes
3/4 cup ground almonds
3 Egg Whites
3 tablespoons cocoa powder
1 1/2 cups Powdered Sugar
1 teaspoon Almond Extract
1/4 teaspoon cream of tartar
1.Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
2. In a mixing bowl, whisk together egg whites and cream of tartar until stiff peaks form.
3.Add sugar , almond extract and cocoa powder and combine well. Do not over whisk.
4.Sift in the almond flour and fold.The batter will be thick.
5. Pipe or spoon the batter onto the parchment paper. Let sit for 10 minutes.
6.Bake for 13 minutes. Allow to cool before removing the cookies from the parchment paper .
These hold well with cream, you can use buttercream etc to make mini cookie sandwiches.
