Mushroom Palak Saag

Saag paneer is one dish that is found in all the Indian restaurants and almost everyone is familiar with it. I’ve eaten this Mushroom Palak Saag dish at a Nepali restaurant in Estes Park in Colorado, this is an attempt to replicate it and it has turned out quite tasty.
Preparation time:30 minutes

5 cups fresh Spinach chopped
1 medium Onion chopped
2 medium tomatoes pureed
1/2 teaspoon ginger garlic paste
6 Green chilli pureed with the tomato
pinch of Turmeric powder
2 teaspoons Oil
1 pint button mushrooms(cut into 4 pieces)
2 teaspoons sesame paste(tahini)
1/4 teaspoon red chili powder(optional for additional spice)

1.Heat the oil in a non stick pan. Add in the onion and turmeric and saute until soft.
2.Add the ginger garlic paste and saute for 2 minutes.
3.Add the mushrooms and saute until they reduce in size, about 5 minutes.
4.Add the tomato and green chili puree and cook for 5 minutes.
5.Add the chopped spinach and let cook for about 10 minutes until the spinach starts to turn color.
6.Add the sesame paste, check your salt and spice ,simmer for 2 more minutes and turn off the stove.

Always cook the spinach uncovered.
If you don’t like the texture of spinach you can add pureed spinach.

You can also add heavy cream or sour cream to your curry for a richer curry.
This pairs well with rice or roti/chapati/naan.
