Coconut ButterCream

This recipe makes coconut butter cream to ice a 9 inch 2 layer cake with scrumptious coconut

Preparation time:20 minutes
Serves: Icing and layering a- 9 inch 2 layer cake

1 cup unsalted butter(2 sticks) at room temperature
3 1/2 cups confectioners’ sugar(powdered sugar)
2 tablespoons coconut milk
1 tablespoon of coconut extract(or vanilla extract if you don’t have this)
1 1/2 cup sweetened coconut flakes
1. Start with whisking the butter in a bowl.

2.Add 1 cup at a time of powdered sugar and continue mixing until the mixture turns pale and creamy. Should not be too runny.

3.Add the coconut milk and mix thoroughly.

If your cream is too loose add more sugar.
If  the cream is too thick add more coconut milk
