Cherry Buttercream

I wanted a baby shower cake for my friends’ baby shower and didn’t want to add any artificial color,so I decided to go the cherry route.

Preparation time:10 minutes
Serves: Icing and layering a 2 layer 9 inch cake.


1/2 cup unsalted butter at room temperature
1/2 cup vegetable shoretening
3 1/2-4 cups confectioners’ sugar(powdered sugar)
1 teaspoon clear vanilla extract or cherry extract(optional)
2 tablespoons cherry preserves/puree

1.Start with whisking the butter in a bowl.

2.Whisk in Shortening and then add 1 cup at a time of powdered sugar and continue mixing until the mixture turns pale and creamy. Should not be too runny.

3.Add the cherry preserves and vanilla extract and mix.
You can add 1 more tablespoon of cherry preserves for more flavor.If your cream is too loose add more sugar.
