Thotakoora Pesarapappu Koora – Amaranth Leaves Moong Dal Fry

This is a Lentil preparation cooked with Amaranthus leaves served with Rice or Roti.Very simple and straightforward to prepare.
Preparation time:40 minutes
Serves:4-6

Ingredients :
Chopped Amaranth leaves 6 cups
Moongdal / Pesarapappu 1 cup
Onion – 1 medium chopped
Green chillies 6 finely minced
Turmeric powder 1/4 teaspoon
cumin seeds 1/2 teaspoon
Mustard seeds 1/2 teaspoon
Garlic 3 cloves minced
Curry leaves 1 stem
Oil  2 teaspoons
Salt to taste

Procedure:
1.Soak the moong dal in water for 30 minutes.
2.Heat oil in a pan, add mustard seeds and cumin and fry them.

3. Add garlic and curry leaves and saute.When they start to splutter add onion pieces,minced green chilies,turmeric and saute.
4.Add the amaranth leaves and salt and cover with lid and let cook until soft.

5.Now add the soaked moong dal along with little water in which they are soaked. Mix well, cover with a lid and cook completely.

Tips:
Can be served with rice or roti.
